Bière de Garde is a Farmhouse Ale born for hibernation, traditionally buried for aging. A scaled malt backbone provides body and toasty Maillard character, while its restrained European hop bill adds soft herbal complexity. Saison yeast develops delicate fruitiness before the beer is aged in both red wine and port barrels. At last, it emerges from the shadows, armed with dark fruit flavors and a breath of heat.
